Turkey Lettuce Wraps with Cucumber Mint Salad

A light and refreshing lunch featuring protein-packed turkey lettuce wraps paired with a crisp cucumber mint salad for added hydration and fiber.
Ingredients
- 16 leaves large lettuce leaves (butter or romaine)
- 8 tbsp mayonnaise
- 2 medium cucumbers
- 0.5 small red onion
- 0.25 cup fresh mint leaves
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 0.5 tsp salt
- 0.25 tsp black pepper
- 600 g sliced turkey breast (deli or cooked)
- 2 medium avocado
- 4 small small tomatoes
Instructions
- 1Wash the lettuce leaves under cold running water to remove any dirt, then pat dry thoroughly with a clean kitchen towel or paper towels to prevent sogginess. Lay the leaves flat on a clean work surface and spread a thin, even layer of mayonnaise across each leaf using a small spoon or butter knife.
- 2Thinly slice the cucumbers into rounds using a sharp knife or mandoline for uniform thickness, and place them in a large mixing bowl. Finely slice the red onion into thin half-moons and add to the bowl. Roughly chop the fresh mint leaves and sprinkle over the cucumber and onion mixture for a burst of flavor.
- 3Drizzle olive oil and lemon juice over the cucumber mixture in the bowl, then season with salt and pepper. Toss everything together gently with tongs or clean hands to ensure the dressing coats the vegetables evenly without bruising the mint leaves.
- 4Layer an even portion of sliced turkey breast onto each prepared lettuce leaf, ensuring coverage without overfilling. Slice the avocados in half, remove the pit, scoop out the flesh, and cut into thin slices, then add a few slices on top of the turkey. Slice the tomatoes thinly and place 2-3 slices per wrap, then season lightly with salt and pepper. Roll each leaf tightly into a wrap or fold like a taco, securing with a toothpick if needed to hold the shape.
