In a bowl, mix the marinade ingredients until smooth, then coat the chicken breasts thoroughly. Let them sit at room temperature for 15 minutes to absorb flavors while prepping the side.
Preheat the oven to 200°C. Toss the broccoli florets with olive oil, salt, and pepper on a baking sheet, spreading them out evenly for roasting.
Place the marinated chicken breasts on a separate baking tray lined with parchment paper, ensuring they are spaced apart. Scrape any excess marinade onto the chicken for added flavor.
Place both the chicken tray and broccoli tray in the preheated oven at 200°C. Bake for 20 minutes, checking the chicken for an internal temperature of 74°C and the broccoli for slight browning on the edges.
Remove the broccoli tray from the oven, sprinkle shredded cheese evenly over the florets, and return to the oven for 5 minutes at 200°C until the cheese is melted and bubbly with golden spots.
Remove the chicken from the oven once it reaches an internal temperature of 74°C. Let it rest on the tray for 5 minutes to retain juices before slicing or serving.
Remove the broccoli from the oven once the cheese is fully melted and slightly golden. Ensure the florets are tender but still have a slight bite for texture.
